Champion´s Breakfast Scramble


  •     2 Cups diced potatoes or hash browns
  •     8 eggs
  •     ¾ Cup plain Greek yogurt
  •     ¼ Cup green onion, finely chopped
  •     2 bell peppers, chopped
  •     ½ lb High Caliber dry-rubbed bacon, fully cooked
  •     ½ lb High Caliber breakfast sausage, fully cooked & crumbled
  •     2 diced tomatoes
  •     ½ cup sliced or diced mushrooms
  •     Spice Hero – to taste
  •     ½ cup crumbled jalapeno Monterey Jack cheese


  1. Whisk eggs and yogurt together in a bowl until smooth.

  2. In a large skillet cook potatoes until about ½ done

  3. Add onions and peppers to potatoes and cook an additional 3 min

  4. Add cooked High Caliber bacon, High Caliber sausage, diced tomato and mushroom; continue cooking until potatoes are crispy.

  5. Add egg mixture to skillet and stir until eggs are fully cooked

  6. Add Spice Hero to taste and top with crumbled Jalapeno Monterey Jack cheese


Serves 4-6
